Mild may mean very little chilli to give a hint of flavour. The problem for some Australian experiences with curry is that mild has quite often contained chilli. This results from experiences with inexperienced local Indian chefs, the experience of traveling overseas or making curry from a bottle. Mild in such situations is in relation to the palate of the chef or the palate of locals where the curry was originally created. As there is no control in any of these situations over chilli, mild may mean very little chilli for the average person from that region. At Curry India, there is no such problem. Chilli is one of the richest sources of vitamin C and promotes a large release of saliva. Saliva is the digestive enzyme needed to digest our food, not stomach acids.
Naan is essentially a pizza. A few differences however, pizza’s have a topping, whereas naan’s have a stuffing. Most stuffed naan’s have a garlic butter topping. Pizza's and garlic bread are crusty, whereas a naan can be sumptuous and soft.
Rice is traditionally served with curry in the southern regions or India. Curry in eaten with naan or roti in the northern regions of India. For this reason Curry India serves curry with your choice of rice, naan, roti or any combination.
Basmati rice is an aromatic Indian grain traditionally served with curry. Basmati is lowest in starch and rivals brown rice for it’s many associated health properties. Basmati rice is recommended by health professionals for diabetic sufferers. Basmati is also a great option when watching your waist line.

The Tandoor is the traditional Indian clay oven used for thousands of years. Tandoori chicken is the most famous product to come from this humble oven. Just like the home BBQ, the Tandoor has progressed from wood to gas as it’s fuel. Curry India uses a traditional wood fired Tandoor to give an authentic smoked flavour to a selection of our flavoursome dishes. The traditional flavours of our Tandoor are yet another uniquely authentic difference of Curry India.
Our wood fired Tandoor needs to be heated four hours prior to usage unlike the gas Tandoor’s which most Indian restaurants have adopted world wide. Gas Tandoor’s are cheaper to run and take less time to heat. The trade off of the flavors for many restaurateurs is not of concern.
Ghee is used to flavour most traditional Indian cuisine. Although flavoursome, Ghee is clarified butter (from cows) and is the equivalent to lard (pig fat). Hardening of arteries, heart disease, heart attacks, diabetes and many other associated health related issues are directly related to the use of Ghee in Indian cooking. Ghee is what makes a meal taste like you have a mouth full of grease, causes a very heavy feeling after eating, sends some people running for the bathroom and adds to the waist line. Ghee makes most curries taste alike and is the golden film of oil on the top of the dish. Curry India refuses to use Ghee and is another reason why our curries are so healthy. The removal of this heavy unhealthy oil, has enhanced our flavors and allowed customers to eat healthy curry many times per week rather than once a month.
Turmeric is the yellow spice most well known for its medicinal action and is used as a powerful anti-inflammatory, the effectiveness of which is comparable to pharmaceutical medicines. However, it also acts as an alter-active, analgesic, antibacterial, anti-inflammatory, anti-tumor, anti-allergic, anti-oxidant, antiseptic, antispasmodic, astringent, carminative, cholagogue, digestive, diuretic, stimulant, and vulnerary. Modern science is beginning to recognize and understand the amazing healing qualities of turmeric and much research is currently being conducted.
